Ingredients:
kg beef rib eye
3 tbsp olive oil, plus 3 tbsp extra
6 tbsp celery, chopped
1 tbsp rosemary powder
1 whole carrot slice
3 tbsp fresh thyme leaves
3 tsp sea salt
3 tsp freshly ground black pepper
230 gr unsalted butter
1 1/2 cup red wine
1 1/2 cup beef stock
Roux for thickening
