There’s no reason for there to be so much bad soup in this world so I am sharing my Grandfather’s famed French onion soup recipe which he developed over his nearly 40 years as a professional chef. While not exactly healthy and rather far from being vegan, it is real dang good. (If you want it vegan you can substitute for vegan stock and vegan cheese)
~Ingredients~ For 4 people
2-3 medium yellow onions
Butter or oil for frying
1.8 litres home made (or store bought) chicken stock
1 Bay leaf
2 Tbsp white wine or dry sherry (optional)
Any bread, toasted
Gruyère or cheddar cheese, grated, for the bread
Fresh parsley or chives, minced, for topping
~Directions~
1. Cook onions in stainless steel pan over medium heat, best with oil, for half an hour until onions are sweet and a rich golden colour (NOT DARK BROWN, this introduces a slight bitter flavour, the sweetness we want is way before they turn a chocolate colour)
2. Add white wine or sherry to deglaze any browned bits on the bottom, then add stock with a bay leaf. Simmer 20 minutes. Taste and add salt as needed.
3. Toast bread then heat cheese on top under broiler.
4. Remove bay leaf. Let the soup cool a while, flavour develops further in this time. This also gives the cheesy croutons time to hold their shape for cutting
5. Plate and serve 🙂
