Jam Ingredients
2 Pounds Strawberries, roughly chopped
10 Grams sage leaves
1 Lemon zested into long strips
Roughly 3 Tbsp wildflower honey
1/4 Red wine (the fruitier the better)

Custard Ingredients
3/4 Cup of heavy cream
1 Whole egg and 2 yolks,
1/2 a Grated tonka bean,
1/2 Tsp vanilla bean paste
1 Tbsp of sugar.
