hiitake Teriyaki French Roast
RECIPE BY CHAVI FELDMAN
โข 14-1b (2-kg) French roast
โข 2 Tbsp onion soup mix
. 1/4 tsp truffle salt or tsp salt
. freshly ground black pepper, for sprinkling
. olive oil, for drizzling
โข 8 oz (225 g) whole baby bella mushrooms
โข 8 oz (225 g) whole button mushrooms
โข 1 large Spanish onion, diced
โข oil, for sautรฉing
โข 3 cloves garlic, minced
โข 8 oz (225 g) baby bella mushrooms, sliced
โข 8 oz (225 g) shiitake mushrooms, sliced
. 1tsp salt
โข 1/2 cup teriyaki sauce
. 1/2 tsp sesame oil
โข 2 tsp red wine vinegar
โข Tbsp brown sugar
To make the sauce: In a large saucepan, sautรฉ onion in oil until soft and
golden. Add minced garlic and stir, sautรฉing for several additional minutes,
until fragrant. Add sliced mushrooms to the pan and sautรฉ over medium
heat for 10-15 minutes or until soft. Add salt, teriyaki sauce, sesame oil, red
wine vinegar, and brown sugar. Mix well and bring to a boil. Lower heat and
simmer for an additional 5-10 minutes.
Remove from heat. Blend sauce with an immersion blender or in a food
processor, using the S blade, until smooth.
Preheat oven to 350ยฐF (175ยฐC). Wash roast and pat dry. Sprinkle with
onion soup mix, truffle salt, and freshly ground black pepper. Drizzle lightly
with olive oil and rub seasonings into the meat. Place in a deep baking pan
and pour blended sauce over the top. Add the whole mushrooms to the pan.
Cover tightly and bake for about 3% -4 hours, checking for doneness
with
a fork. A fork should slide in easily and the meat should feel tender when
done.
Allow meat to cool to room temperature or refrigerate until firm before
slicing, Reheat
