I am happy to be sharing with you this delightful recipe for les merveilles. This is a biscuit famously eaten in the South West of France, particularly during Carnival season, but anytime is a good time. These biscuits are made from a light, fluffy egg pastry, deep fried in oil and then coated generously with icing sugar. These biscuits aren’t too sweet, yet are incredibly addictive. A perfect breakfast or afternoon tea for all!
The ingredients you’ll notice aren’t too extravagant. They’re rather simple in fact. It’s definitely the rum and vanilla that add to the hearty flavour of these biscuits. Some recipes will use lemon but I much prefer with rum and vanilla.
