Ingredients & Method :
For the pastry: You’ll need to add 100gm of chilled butter to 140gm of all purpose flour. Lightly smash the butter cubes into the flour using your fingers until it reaches the consistency of wet sand. Pour 75ml of ice cold water and cut into the mixture until it forms a solid dough. now bring it together in the bowl using your hands and place a cling film sheet over it. Cool the dough in the fridge for 30 mins.Now unwrap the dough and dust some flour onto your tabletop.Take a small chunk of the dough and carefully roll it out into an even sheet. now lay it over the quiche mould and cut off the excess dough using a knife. Do the same for the other two moulds. Place them in a baking tray. Now place pieces of parchment paper onto your bpastry dough and pour handful of chickpeas onto them. Blind bake the pastry dough in a preheated oven at 180°C for 12 mins.
For the filling: In a nonstick pan, add 2 tbsp of butter and let it melt now, add 5-6 chopped garlic pods, 1 chopped onion, crushed black pepper to taste, 1 tsp of sugar, salt to taste and 15-20 chopped spinach leaves. Stir it all until it changes to a light green color. Take it off the flame and let it cool on the side. 2 eggs, 1 tsp of mustard paste, now, in a clean bowl add crushed black pepper to taste, 1 tsp sugar, 120ml of milk. add salt to taste along with 50gm of grated cheese and whisk it all together. Carefully remove the chickpeas along with the parchment paper from the quiche moulds.now spoon in a generous helping of the hot filling into the pastry cups. Give your egg and milk mixture one last mix and pour it into your filling one at a time. Bake it in a preheated oven at 180°C for 20-25 mins.
