In today’s video, The Wine Sisters’ founder and Chief Sommelier shows you her favourite onion tart recipe that can be made ahead of time, and even served at room temperature for the easiest of entertaining.
Of course we wouldn’t be The Wine Sisters is there wasn’t wine! Today Erin is pairing two delicious wines to please both red and white wine lovers.
It’s finally spring time and this modern take on a classic onion tart is perfect for easy, elegant entertaining.

🌟 Recipe 🌟

Ingredients:
2 -3 cups caramelized onions
Extra virgin olive oil
salt and pepper
1 cup sautéed leek
1 250 g package of fromage blanc (alternatively softened goat cheese or cream cheese will work)
1 Tbsp fresh thyme
3 Tbsp drained capers

How to do it:

To caramelize the onions:
Thinly slice onions.
Warm olive oil in a large pot over medium heat.
Add the onions and season lightly with salt and pepper.
Stir to coat in oil and allow to cook down until jammy, stirring occasionally, about 45 minutes – 1 hour.

To assemble the onion tart:
Unroll a sheet of puff pastry and roll out to about 8 x 11
Fold over the edges to create a border
Spread fromage blanc across the interior of the pastry
Sprinkle a few turns of cracked pepper over the cheese
Combine the cooked leeks with the onions and spread over the cheese
Sprinkle thyme leaves and top with capers
Place the tart in a 400°F oven and bake for about 10-15 minutes, checking every few minutes after the 10 minute mark for browning.
Allow to cool for 10 minutes, then slice into squares and serve with a leafy green salad and good wine.

Wine Pairings:
Fruit forward, light to medium bodied wines, with moderate acidity and low tannins work best to pair with the sweetness of the caramelized onions and salty tang of the cheese and capers.
For today’s onion tart Erin chose a German Pinot Gris for the white wine and a juicy Côtes du Rhône for the red wine.
