Today I’m sharing our recipe for French onion soup. Obviously this isn’t a traditional French onion soup, but our take on it.
✦ French onion soup ✦
3-4 large onions
salt & pepper
French herb mix (contains parsley, thyme, chives, rosemary & marjoram)
good chunk of butter
3-4 tbsp of flour
1 – 1.5 glasses of red wine (preferably a French merlot)
1 small can of tomato paste (about 70 grams)
1,5 – 2 liters of vegan bouillon
add a little bit of oil to a large pot and fry the onions in that until they’re soft. melt the butter in the pot and add the flour to create a little roux. mix that till the raw flour taste is gone and add the red wine. then add the tomato paste and stir. add the bouillon, stir again and simmer on low till the soup thickens.

1 sheet of puff pastry (mine was 40 cm x 24 cm, around 270 grams)
French herb mix (contains parsley, thyme, chives, rosemary & marjoram)
salt
Violife mozzarella shreds (or any other vegan shredded cheese)
extra virgin olive oil
cut the puff pastry in 6 pieces and spread a little bit of oil on them. then sprinkle on the herb mix, salt & mozzarella shreds. roll them up and brush them with more oil. bake them in the oven on 200 degrees celcius for anywhere between 10-20 minutes, depending on how strong your oven is and the package instructions of your puff pastry.
