Shopping List:
(French Fries)
2lbs Russet Potatoes
2 liters of oil for frying
1 cup grated parmesan cheese
1 tbsp black truffle oil
1/4 cup diced parsley
salt, pepper, garlic, onion powder
2-3 tbsps white vinegar
Peel, clean, and chop potatoes into desired size. Boil potatoes in water and vinegar for 10 minutes. Drain and cool. Fry at 300-325 degrees for 3-5 minutes – remove and cool for 30 minutes. Fry again at 400 degrees for 2-3 minutes or until golden brown and crispy.
CHIMICHURRI SAUCE:
1/4 cup olive oil
2 tablespoons white vinegar
1/2 cup finely chopped parsley
1/2 cup chopped cilantro
2-3 tbsps diced red onion
3-4 cloves garlic
1 fresno chili
3/4 teaspoon dried oregano
salt and pepper to taste
NY Strip Steak:
1 NY Strip (preferably at least 1 1/2 inches thick)
salt (dry brine optional)
pepper, garlic powder, onion powder, smoked paprika
3-4 tbsps butter
2-3 cloves of garlic
rosemary and thyme
