2/3 cup oil, I don’t use oil
8 chicken drumsticks, or wings too
8 chicken thighs
4 ribs celery, cut in long strips
1 medium onion, chopped
6 sprigs parsley
1 tablespoon fresh tarragon or 1 teaspoon dried
1/2 cup dry vermouth
2 1/2 teaspoons salt
1/4 teaspoon fresh ground pepper
dash nutmeg
1 tablespoon Rosemary
40 cloves garlic
french bread or toast

Pour oil into shallow dish; add the chicken; turn to coat all sides evenly.

In heavy 6 quart casserole combine celery, onions, parsley, and tarragon; lay chicken on top; add vermouth. Sprinkle with salt, pepper, and nutmeg; tuck garlic cloves around and between chicken pieces. Cover casserole tightly with foil, then with the lid. (use a heavy roasting pan or make in the crockpot).

Bake in preheated 375-degree oven for 1.5 hours without removing the cover. Serve chicken with pan juices, whole garlic cloves, and slices of heated French bread or toast. Spread garlic onto bread like butter. Makes 8 servings.
