A visit to the birthplace of sparkling wine, the Abbey of St. Hilaire, in Aude, France located in the western part of the Languedoc wine region. The Champagne wine region may get all the glory for sparkling wine, but they actually got the idea when a traveling monk by the name of Dom (Pierre) Pérignon brought the concept home after visiting the Abbey of Saint Hilaire, where monks had already been making it for 129 years prior to his arrival. (Shot with iPhone 7, edited on iMovie for iOS. November 21, 2019.)
