D23’s Recipe:

French Toast with Fresh Berries and Mascarpone Cream
Tony’s Town Square, back when they used to serve breakfast (pre-2012)
Adapted from the recipe posted by D23, but very much changed

French toast:
2 eggs
2 cups whole milk
1 tsp vanilla extract
1/2 tsp cinnamon
8 pieces thick-cut bread (sourdough recommended)

Mascarpone cream:
1/2 cup mascarpone cheese, softened
1/2 cup heavy cream
1/2 cup confectioner’s sugar

Toppings: strawberries, blueberries, orange (for zest)

First, mix your mascarpone cream and set it in the fridge. All ingredients should combine evenly. You can adjust any of these to achieve your desired consistency. Get out a small cutting board and set it close by. Give your blueberries and strawberries a rinse. Put the blueberries in one bowl to be served, and then slice your strawberries however you’d like. I just cut off the ends and then go down the middle once and that’s enough for me. Place those in another bowl and into the fridge with your cream. Have a zester ready to go for later.

Find a bowl wide enough to dunk your bread in the french toast mixture you’ll be making now. Whisk together your eggs, milk, vanilla extract, and cinnamon. Begin heating a nonstick pan over medium heat as you prepare your french toast. You don’t want it to get too hot! Drops of water should sizzle, but no smoke should be rising. This is the perfect temperature.

Evenly coat your slices of bread with the mixture, but don’t let them sit too long. You want the thickness of the bread to soak up the mixture, but anything can get waterlogged, and if this happens to you, they’re never gonna look finished. You can lay down a little bit of butter if you want, but you shouldn’t need it – and again, too much butter and you’re not gonna get these cooked. Think of when you’ve done a bad job on pancakes. It’s even worse here! Cook them on each side for about 2 minutes until golden brown.

With everything done, get it all plated and served. The orange zest comes at the end, just on top of your cream. It really lifts the flavor of everything around it. Enjoy! This is a really light, refreshing take on french toast.

***If you run out of bread mixture, you can go 1:1 on eggs and milk with half the vanilla and cinnamon. This recipe is designed to be easily halved, doubled, or heck, whatever else.
