Today I’m going to show you how to make the Best Pumpkin Sausage Pasta Sauce. It is loaded with fresh herbs and is a favorite Pasta Sauce to have for a crowd when you are entertaining.
Here is the one batch recipe and below is what I did:
🔴 PUMPKIN PASTA
⬇️⬇️ INGREDIENTS ⬇️⬇️
➤ 2 Tablespoons Olive Oil, divided
➤ 1 lb bulk sausage (sweet Italian or Jimmy Dean, I use Jimmy Dean)
➤ 5 cloves garlic
➤ 1 onion, chopped
➤ 2 bay leaves
➤ 4-6 sprigs sage leaves (or dried)
➤ 1 1/2 cups dry white wine
➤ 1 1/2 cups chicken stock
➤ 2 cups solid pumpkin (I use whole can)
➤ 1 cup heavy cream
➤ 1 tsp ground nutmeg
➤ salt and pepper to taste
➤ Cooked Penne or similar pasta
👉 Directions:
Heat 1 Tablespoon of olive oil in pan and brown sausage. Drain fat and put sausage on towel-lined plate. Return pan to heat and add 1 Tablespoon of olive oil and saute onion and garlic until tender. Add bay leaf, sage and wine. Reduce wine by 1/2. Add stock and pumpkin and stir to combine, cooking until it starts to bubble. Return sausage to pan, reduce heat and stir in cream. Season with nutmeg, salt, and pepper. Simmer 5-10 minutes until thickened. Serve over Penne and top with parmesan cheese.

➤ 6 lb bulk sausage (sweet Italian or Jimmy Dean, I use Jimmy Dean)
➤ 12 cloves garlic/1 bulb
➤ 3 onions, chopped
➤ 6 bay leaves
➤ 8 sprigs sage leaves (or dried)
➤ 4 1/2 cups dry white wine
➤ 4 1/2 cups chicken stock
➤ 2 large cans of pumpkin
➤ 1 quart heavy cream
➤ ground nutmeg to taste
➤ salt and pepper to taste
➤ Cooked Penne
Directions: Same as above
