This recipe is a twist on the classic French onion soup. I added roasted mushrooms as well as shallots and a hint of cream.
INGREDIENTS:
12 tablespoons salted butter
3 medium yellow onions, thinly sliced
4 shallots, thinly sliced
1 1/4 cups dry white wine,
2 teaspoon honey
4-6 cloves garlic
8 oz mushrooms
3 tablespoons fresh thyme leaves
3 tablespoons fresh rosemary
3 tablespoon fresh sage
Salt and pepper, to taste
2 teaspoon red pepper flakes
6-8 cups chicken broth
1/3 cup cream
3 cups shredded Gruyère cheese
