For a hearty breakfast or brunch, try this Poutine Recipe! You gotta have the cheese curds and gravy, but it’s your choice about the sausage and gravy. It’s an easy recipe, but you can double fry the potatoes if you want to go all the way.

It’s takes about 10 minutes to prepare and about 15 minutes to cook. Serves one (that’s me)…but could be for two…nah, on second thought, just one!

INGREDIENTS:
3 potatoes, sliced for French Fries
2 sausages (I used chicken but go with what you like best)
2 eggs
12 Oz Cheese Curds (You gotta use the real thing)
½ red pepper, cleaned without seeds
1 medium onion
3 Tblsp Ghee
1 tsp salt
About 8 Oz of your favorite Country Gravy
1cup of cooking oil (Enough to fill an inch in your cast iron pan)

METHOD:
• Warm up the gravy in your pellet grill.
• Heat the oil to 350F
• Cut the potatoes into French Fry size. (I use a dicer but sometimes I make them as wedges.)
• Fry the potatoes until crispy golden brown. (The best French Fries are double fried, but this is the easy recipe.)
• Remove the fries from the pan and drain them on paper towel.
• Remove the oil from the pan and then put the French Fries back in the pan.
• Break up the cheese curds in pieces and add them over the potatoes and place the pan in the pellet grill.
• Add some Ghee to your griddle. (I used my Blackstone Rangetop Combo because it’s got the deep fryer and flat-top griddle.)
• Slice the sausages length-wise and place them on the griddle, flat side down, at first.
• Slice the onion in rings and slice the red pepper in thin strips.
• Fry the onions and peppers on the griddle, next to the sausage.
• When the onions and peppers are a little charred, take out the pan with the French Fries and add the fried onions and peppers slices.
• Add more Ghee on the griddle and fry the two eggs.
• Add the sausage to one side of the pan.
• Add the fried eggs to the other side of the pan.
• Then add the Country Gravy to your heart’s content.
