Hello my friends and thanks for joining me for another Cookmas recipe. Today is Cookmas Day 15 and I am making an easy dinner meal that can be made any night of the week and it is sure to please! This meal has all the delicious flavors of a French onion soup but it’s incorporated into a chicken dish. Believe me, if you are a fan of French onion soup you will love this recipe. Ingredients:
1 Tbsp Butter
1 Tbsp Olive Oil
½ tsp Salt
4-5 medium Onions, sliced thin
3 tsp minced Garlic
1 tsp Thyme
½ cup Beef Broth
1 Tbsp Dijon Mustard (optional)
4 boneless, skinless Chicken Breasts
1 cup shredded Mozzarella or Gruyere cheese
INSTRUCTIONS:
Preheat oven to 400ºF.
Heat butter and oil over medium high heat in a large oven safe skillet. Add onions and cook undisturbed for 5 minutes, until onions start to sweat and have browned in places. Reduce heat to medium low, add salt and and cook for an additional 10-15 minutes, stirring occasionally, until the onions have softened. Add garlic and thyme and cook for an additional 2 minutes. Add in beef stock and mustard and scrape up any browned bits and continue to cook until the liquid has reduced by about half, about 2 minutes.
Set aside ½ cup of the onion mixture.
Season the chicken with salt and pepper then nestle the chicken in the skillet. Divide the set aside onions on top of the chicken.
Place in the preheated oven and bake until chicken is cooked through, about 20-25 minutes.
Sprinkle the shredded cheese on top of the chicken and melt back in the oven for about 5 minutes or put it under the broiler for about 1 minute. Serve and ENJOY!
Remove thyme sprigs and serve.
