Have you ever wondered what makes for the best French onion soup? Making an amazing French onion soup is actually a very easy process, but it does take time and a few key ingredients. It’s not a recipe you can take shortcuts on, but once you have your beautifully rich, complex and delicious onion soup in front of you, you’ll realise it was worth the time!
For my French onion soup, I’m using 3 different types of onion; yellow, red and shallots. Each onion has it’s own distinct flavour profile and adds layers of complexity of the soup. I also show you how to make a flavourful beef broth from scratch, but you can always use a store bought beef broth and skip this step! If oyu do this, I’d recommend buying the best beef broth you can!

An authentic French onion soup would include baguette roundels, but I prefer making crotons, because I hate fighting the bread to get to the soup beneath! Crotons just make life a bit easier, what with being in bite sized pieces. Perfect for transporting that delicious Gruyere cheese to your mouth!!

INGREDIENTS
Homemade Beef Stock:
2.5lbs (1.1Kg) beef shanks
1 large onion
125ml wine (or water)
4 litres water
2 tbsp olive oil
2 bay leaves
a handful of peppercorns
lots of salt, as instructed
French Onion Soup:
2.5Kg onions (Mostly yellow, with a handful of red onions and shallots)
100g butter, unsalted
1 large baguette
a drizzle of beef fat (from the stock), or olive oil, or butter
3 cloves of garlic, grated
2 tbsp balsamic vinegar
250ml wine (or water)
1 litre of beef stock
some sprigs of thyme
gruyere cheese (50g per person)
2 tbsp brandy or calvados (optional)
lots of salt, as instructed
This recipe makes enough for 4-6 people.
