CHEESIEST FRENCH ONION SOUP EVER! COOKING RECIPE | ASMR Phan
It’s been raining and so cold in Washington (state) right now so making soup has been perfect for the weather! Here’s my recipe!
4 sliced large yellow onions
3 fresh cloves of garlic minced
1 tbs fresh thyme (6 stems)
1 tbs Kerrygold butter
1-2 bay leaves
Sargento Provolone cheese
Sargento Baby Swiss
Black Pepper
Salt (amount will vary depending on how salty the brand of beef broth you use. Mine was not salty so I had to add more salt to taste)
32oz Organic Beef Bone Broth
2-3 slices of toasted sourdough cut up into bite size pieces
1/2 tbs mushroom seasoning (found at the Asian market)
A few splashes of soy sauce
A few splashes of Worcestershire sauce
Will serve 4 for a side soup or 2 generously for a meal
Add butter, sliced onions, minced garlic into a pot. Cook down until most of the moisture is gone. This will take about 40 mins or so. Once onions caramelize (turn white to golden) add in beef broth, black pepper, bay leaves, mushroom seasoning and a splash each of soy sauce and Worcestershire sauce. Bring to a boil then taste for seasoning. This is when I add in salt and if needed a splash more Worcestershire sauce and soy sauce. Beef broth can vary in sodium content so I make sure I add any sodium base seasoning after I taste the base of the soups. Remember you can always add more salty seasonings vs taking it away :). Preheat oven at 350 to toast bread.
Throw in the thyme leaves (save a stem to garnish) and keep on low while you lightly toast your bread of choice. I love sourdough bread so I’m using that but any French bread will do! Cut into bite size pieces so it will be easier to eat. Ladle onion soup into a oven sauce bowl. Top with pieces of toasted bread. Then layer slices of cheese right on top covering all the bread. I like to place the bowl on a oven baking sheet to catch cheese spillage. Low broil until cheese is melted and edges are golden. Add some fresh thyme leaves on top and it’s ready to serve!
