1kg – Bread Flour
10g – Instant Yeast (3% fresh yeast or 1% instant yeast)
18g – Salt (1.8%)
5g – Malt (or Honey) (0.5%)
630ml – Water (63%)
3/4 cup – Raisins (Optional)
