This is a really delicious recipe I found in a cookbook called Chicken Made Simple. It’s definitely flavorful and easy to make.
Ingredients
• 1 Tablespoon olive oil
• 1 Tablespoon unsalted butter
• 8 bone-in, skin-on chicken
thighs
• 2 small or medium onions,
chopped
• 8 ounces button mushrooms,
quartered
• salt and pepper to taste
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried tarragon
• 2 cloves garlic, minced
• 1 Tablespoon flour
• 3/4 cup chicken stock
• 3/4 cup dry white wine
• 1 cup canned diced tomatoes
• 1 bay leaf
• fresh chopped parsley for
garnish
Directions
1. Heat olive oil and butter over medium high heat in a large skillet. Add chicken thighs to pan skin side down and cook till golden brown. Turn chicken and reduce heat to medium. Cook about 3-5 minutes. Then transfer chicken to a plate.
2. Add onions and cook till soft and translucent, add mushrooms. Cook stirring frequently about 5 minutes.
3. Add thyme, tarragon and garlic, stir constantly for 1 minute.
4. Sprinkle in the flour and cook stirring constantly for 1 minute.
5. Add the chicken stock and white wine. Stir together scrapping any brown pieces.
6. Stir in the tomatoes, add bay leaf and add chicken skin side up back to pan. Increase heat and bring to a boil.
7. Once boiling, reduce to a simmer and cook uncovered for 30 minutes stirring sauce around chicken and spooning sauce over chicken.
8. Discard bay leaf and sprinkle parsley over chicken if you want.
