This is a delicious recipe for lemon Madeleines, using buerre noisette, lemon zest and vanilla to create a perfect flavour sensation to enjoy these beautiful treats with your cuppa. Or simply on their own.
Another great recipes you can make ahead. You can make the batter in advance and take it out when you are ready to serve the Madeleines warm and fresh too.
The Madeleine is characterised by its unique shell like appearance and if you get the hump on the other side, you don’t need to panic, that’s a perfect historical characteristic of the Madeleines!

Thank you to my friend who sent me this recipe which comes from the Food Safari Cookbook. I have not made this recipe before, I actually have another two versions I make, but I thought it was a lovely one to try and especially now that we have lemons on our baby lemon tree! Yay!

Ingredients:
40g unsalted butter
100g (2/3 cup) plain flour
100g castor sugar
1 egg
1 1/2 TBSP milk
1 vanilla pod, seeds scraped
Grated zest one lemon
1/2 tsp baking powder
Rest batter in refrigerator 1-2 hours
Oven 170 deg
Bake 6-10mins
