This is a great recipe to make on a day like today, when it’s 95 degrees at 3:00pm in the afternoon. This is an EASY recipe to make, requires nothing more than is bit of chopping, cutting and dicing p and maybe pre-frying the shrimp.

It will feed four people, and pretty large servings at that. If you need it to feed more people, just increase the ingredients! As a caveat, though, if you want more color and less bitter – substitute a yellow or orange pepper for the green pepper. The sweetness of the yellow or orange pepper would work really well with this.
