Hi friends! Today I am going to be sharing an universal favorite and extremely tasty French fries recipe. I know the thought of fries makes all go hungry and drooling. This is a snack that I got to have after the boom of international joints like Macdonalds and KFC boom in my hometown after we finished studies. Till then potato chips for us was a think hard stick fried and seasoned with chilly powder and served as an occasional tea time snack. Potato is a versatile vegetable which can be used in a million ways and the variety of snacks prepared with it is boundless. I have come to this conclusion after my cooking escapades started with MCF and I keep myself not be sharing more of it successively.
French fries, got its name with a history that it was first made in France but was later disputed with Belgium claiming rights for the same. Fries/chips/French fries as its popularly knows also is referred to as chips/hot chips and French fried potatoes in certain countries. Skinned and parboiled finger sized potato pieces fried to perfection and optionally seasoned is the French fries we all love. Having had French fries from different joints and using the frozen store bought fries to fry at home for parties and Sarvesh, I never bothered trying it. One episode of getting a local brand here and having had to throw most of it as was tasting too plain made me think of trying it at home and so it began.
Multiple trials with recipes shared by friends and online ones I have finally found this fool proof recipe which gives the perfect golden yummy and crunchy French fries that will put the store bought ones to shame. I have given you step by step process and tips to ensure you get it perfect too. It might look lengthy when you see it but trust me it just is worth the effort and you can store the semi fried fries like the store bought ones and use when you require which makes it an easy -peasy affair for parties. Serves : 4 people
Course : Snacks/Starters – Crispy French Fries
Ingredients:
Potatoes : 1 kg
Water : as required
Salt : 1 tsp
Corn starch : 1 and 1/2 tbsp
Oil : as required
Instructions:
• Wash and peel the potatoes on by one.
• Cut the edges on all 4 sides as shown.
• Now start cutting lengthwise in the centre as shown.
• The pieces should be finger sized and even to get perfect shape.
• Once all potatoes are cut into finger sized pieces transfer to a bowl and set aside.
• Now add water and rinse thrice.
• Now pour water and allow to soak for about 20 to 30 mins.
• After 20 mins strain the water.
• Keep stove on medium flame and place a pan.
• Add water and salt. Mix well.
• Once the water starts to boil add the strained raw potato finger pieces.
• Stir and allow to boil for about 5 mins.
• Now switch off the stove and strain the potato fingers.
• Place on a kitchen towel / tissue.
• Once water drained again wipe with a tissue to ensure its dry.
• Once completely dry transfer to a bowl and add the corn starch.
• Shake well and don’t mix with hands or spoon.
• Remove the extra corn starch from the slices.
• Set aside.
• Keep stove on low to medium flame, place a pan and pour oil.
• Once oil hot add the potato pieces one by one.
• Stir in between and fry for 5 to 8 mins till fried on all sides.
• Remove using a strainer and set aside on a plate.
• Tap the pieces to the bowl and add the fries to the oil one by one every time.
• Repeat the process till all the fries are done.
• Now allow to cool completely.
• At this stage you can store these fries in the freezer and fry them later when required.
• Once the fries are cooled down completely, place the same oil pan on the stove.
• Keep the flame on medium to high flame.
• The oil is still clean after the first fry as not oil is absorbed and no sediment.
• Once oil hot add the fried and chilled potato fingers one by one.
• Fry for about 2 to 3 minutes until golden brown.
• Remove using a strainer and transfer to a bowl.
• The fries absorb no oil and you can see the complete oil remains after frying.
• Repeat the process for the rest of the fries or freeze for later use.
• Crispy, yummy and perfect French fries ready to serve plain or with sauces of your choice.
