Whether you know it from the movie with the little rat or you were looking for a vegan southern french dish, this authentic dish is colorfull, vegan, glutenfree, lactosefree healthy and super tasty!
The orinigal dish is with courgette(zucchini) but by personal preferance, I replace it with eggplant in this dish because it brings a smother taste to the mix than courgette.
What you need (for 2 persons):
● 2 eggplants
● 3 onion
● 4 tomatos
● 3 paprikas (preferably different colors)
● 5 garlic cloves
● Fresh oregano
● Salt and olive oil
● A citrus
Follow this 6 step process
1) Cut a few eggplants in leaves for the decoration, put some pressed lemon on them so that they don’t turn brown
2) Wash and cut the vegetabless in disces.
3) Use 2 pans. In the first put the eggplant with a lot of oil (about 100ml)
4) In the other put the paprika, 10 minutes after the oions, then 10 later the tomato and then the cut of oregano and garlic
5) Blend the 2 pans toghether when ready (after 30min)
6) Serve with some fresh oregano on top, put some salt.
