For the mousse:

80 grams /2.8 oz white chocolate
120 ml /4 fluid oz cream (heavy whipping cream) has to have t least 33 % fat content (for the whipped cream)
30 ml cream (to add to the chocolate)

For the forest fruit coulis:
100 grams /3.5 oz frozen berries
a squeeze of lemon juice
10 grams / 2 teaspoons white sugar
