CHICKEN PROVENCAL IS ORIGINALLY COMES FROM SOUTHERN FRENCH. USUALLY THE ORIGINAL RECIPE THEY USED THIGH PART OF THE CHICKEN BUT ON MY VERSION I USED DRUMSTICK TO DO SOME ADDITIONAL PRESENTATION,BUT STILL GOOD BUT JUST DONT OVER COOKED THE CHICKEN, AND I USED WATER IN THIS VIDEO BECAUSE SOME PEOPLE HAVE NO STOCK AVAILABLE AT HOME ,BUT I ADVICE TO USE CHICKEN STOCK INSTEAD WATER IF YOU HAVE SOME AT HOME TO GET MORE ADDITIONAL TASTE AND FLAVOR. BUT WATER CAN DO THE JOB.
CHICKEN PROVENCAL IS VERY SIMILAR TO CHICKEN AFRITADA WHICH IS MOST FILIPINO’S FAVOURITE. THE DIFFERENCE BETWEEN THE TWO ARE THE PROVENCAL INGREDIENTS HAS USING WHITE WINE,KALAMATA OLIVE AND FRESH TOMATO, WHILE AFRITADA USUALLY USING ONLY A TOMATO PASTE FOR THE BASE SAUCE ALONG WITH THE OTHER INGREDIENTS.
IF YOU WANT TO COOK THIS AT HOME ,DONT SKIP THE WHITE WINE OR OLIVE TO GET EXACT FLAVOUR OR THE TASTE OR ELSE WITHOUT WHITE WINE OR OLIVE IT WILL BE LIKE EXACTLY AFRITADA CHICKEN.
