4 boneless rib chops
2 large yellow onions
3/4 cup beef broth (in the video I used 1/2 cup but it felt it need the extra)
1 T flour
1/2 tsp dried thyme
1 T balsamic glaze or 2 T balsamic vinegar and 2 t sugar
8 slices of provolone cheese (or grated gruyere)
salt and pepper
