In this video, I’m going to show you another hotel recipe that we used and serve in our beautiful 5 star luxury hotel. Today, we will look at how to make Tomatoes Provencal. It is a light and tasty vegetarian dish that is best to enjoy for breakfast in the hot summer months when tomatoes are at their rightest.
INGREDIENTS:
Firstly, for the herbed breadcrumbs you will need.
180 grams of white bread.
4 grams of basil leaves.
4 grams of parsley.
2 grams of thyme.
2 grams of rosemary.
1 gram of oregano.
30 grams of parmesan cheese.
and 1 gram of white pepper powder.
This makes 180 grams of the herbed breadcrumbs.
For the tomatoes Provençal you will need.
12 tomatoes.
10 milliliters of canola oil.
50 grams of herbed breadcrumbs.
5 grams of garlic sliced thinly.
1 gram of freshly ground black pepper.
and two grams of maldon sea salt.
This recipe fills a one third ceramic GN pan.
PROCEDURE:
Step 1. Prepare your mis en place by slicing the white bread, trimming off the sides and breaking into big chunky pieces; picking the basil, parsley, thyme, rosemary, and oregano. This is a top tip as picked herbs are better to use than chopping them as they stay fresher when blended with the breadcrumbs. Place these into a mixing bowl ready to be blended.
Step 2. in a blender, blend the bread pieces, herbs, grated parmesan cheese, and white pepper powder until they are blended fine.
Step 3. once the mixture is fine and evenly mixed, place a quarter of the mixture in a mixing bowl.
Step 4. store the herb breadcrumbs in an airtight container and use as required.
Now for the method of making the tomatoes Provençal.
Step 1. prepare your mis en plus which includes making the herbed breadcrumbs and then cutting the top of the tomatoes off, and then thinly slicing the garlic.
Step 2. line the tomatoes in a roasting tray.
Step 3. sprinkle with freshly ground black pepper, mold, and sea salt, and then brush canola oil onto the tomatoes.
Step 4. place the sliced garlic on top of each tomato with tongs, and bake in a preheated oven at 170 degrees Celsius for 5 to 7 minutes depending on the size of the tomato.
Step 5. take it out from the oven and top with herb breadcrumbs and arrange.
Step 6. grate in the tomatoes with herbed bread breadcrumbs in a salamander for two minutes until golden brown on top.
Step 7. arrange them in a ceramic GN pan and serve hot.
