I made eggs benedict and squid ink English muffins. As I was making the spaghetti alla carbonara, I suddenly got inspired to make this recipe.
Instead of the traditional method of using clarified butter for hollandaise, I mixed guanciale fat and butter 1 to 1 ratio. I also substituted back bacon/ham with pancetta.
I added squid ink when I was making English muffins to give it a bit of difference.
It looks interesting, doesn’t it?
