A friend of ours, Iker Berasaluuce is a fantastic wine expert and taster based in Vienna, Austria and we decided a collab that highlighted wine + desserts was in order!
For this fourth episode we developed a recipe for a gluten free triple chocolate raspberry cake – a naked cake! (meaning not fully-frosted). Three layers of rich chocolate cake, filled with chocolate buttercream, chocolate whipped cream, chocolate ganache, and raspberry jam. We wanted it to be a layer cake that was very approachable for anyone who has never made a layer cake before or who’s short on time and needs a fancy dessert to go with their wine! The wine Iker chose was a French red sweet wine, Banyuls by M. Chapoutier (we ordered the 2017 vintage easily here in California!). Learn more about this incredible wine in the video!
