• 1 SPLASH OLIVE BRINE
• 3 DASHES TABASCO
• ¼ TSP CELERY SALT
• 3-4 TURNS BLACK PEPPER (LESS THAN HALF TSP)
• STIR AND TOP WITH ICE
• GARNISH WITH 4 OLIVES AND A LEMON WEDGE

PEACH BELLINI:
• 3 BARSPOONS PEACH PUREE
• PEACH PUREE IS:
2 PEACHES/ 3/4OZ/22.5ML FRESH LEMON JUICE/ 2 TSP SUGAR BLENDED TOGETHER
• 1OZ/30ML PEACH AND ORANGE BLOSSOM VODKA
• (YOU CAN USE PLAIN VODKA OR PREFERRED GIN)
• 1OZ/30ML PEACH SCHNAPPS
• TOP WITH CHAMPAGNE
• (OR YOUR PREFERRED SPARKLING WINE)

FRENCH 75 SQUARED:
• 1 BARSPOON SUGAR
• ABOUT 1 TSP
• 2OZ/60ML GIN
• 1OZ/30ML ST GERMAIN
• 1OZ/30ML FRESH LEMON JUICE
• SHAKE WITH ICE AND TOP WITH CHAMPAGNE (or Brut if you already have it open 😉
