Ingredients:
All-purpose flour (Maida) – 2 tbsp
Besan (Gram flour) – 1 tbsp
Rice flour (Chawal ka atta)- 1 tbsp
Red chilli powder (Laal mirch) – 1/2 tsp
Salt (Namak) – 1/2 tsp (To taste)
Crushed roasted coriander (Bhuna kuta dhania) – 1 tsp
Crushed roasted cumin (Bhuna kuta zeera) – 1/2 tsp
Carom Seeds (Ajwain) – 1/8 tsp or 2 pinches
Turmeric powder (Haldi) – 1/8 tsp or 2 pinches
Lemon juice (Lemo ka ras) – 1 tbsp
Green chilli paste (Hari mirch pisi) – 2 small
Garlic paste (Lehsan pisi) – 2 cloves or 1 tsp
Cold Water (Tanda Pani) – 2-3 tbsp (as needed)
Potato (Aloo) – 3 medium (Fries)
Oil for deep frying

Directions:
In a bowl add:
All-purpose flour (Maida) – 2 tbsp
Besan (Gram flour) – 1 tbsp
Rice flour (Chawal ka atta)- 1 tbsp
Red chilli powder (Laal mirch) – 1/2 tsp
Crushed roasted coriander (Bhuna kuta dhania) – 1 tsp
Crushed roasted cumin (Bhuna kuta zeera) – 1/2 tsp

Carom Seeds (Ajwain) – 1/8 tsp or 2 pinches
Turmeric powder (Haldi) – 1/8 tsp or 2 pinches
Salt (Namak) – 1/2 tsp (To taste)
Green chilli paste (Hari mirch pisi) – 2 small
Garlic paste (Lehsan pisi) – 2 cloves or 1 tsp
Lemon juice (Lemo ka ras) – 1 tbsp
Cold Water (Tanda Pani) – 2-3 tbsp (as needed)
– Water is added to form thick mixture
Potato (Aloo) – 3 medium (Fries)
– Coat fries evenly
– Oil for frying – medium heat
– Fry on medium heat for 5 mins
– Remove from oil and rest for 10 mins
– Fry on medium high heat until golden (3 mins)
Tip: Double frying results in crispier fries
– Season with chaat masala and serve
