For this burger + cocktail pairing, we knew we just had to incorporate sparkling wine because lobster & bubbly is a win every time. Our French Mojito is a mashup of a French 75 and classic Mojito. The sweetness of the rum plus the freshness of the mint and citrus did a great job of cutting through the rich components of the burger. Top it all off with crisp dry sparkling wine and you’re in paradise.

FRENCH MOJITO
2 oz Mount Gay Eclipse
.5 oz Fresh Lemon Juice (strained so there’s no pulp/seeds)
.5 oz Mint Syrup*
Dry sparkling wine
DIRECTIONS: Shake all ingredients with ice until well-chilled. Double-strain into flute or coupe glass. Float bubbly on top and garnish with mint sprig.
*Mint Syrup – Add 1 cup sugar and 1 cup water to a pan with 12-15 mint leaves. Bring to a low boil and stir until sugar is dissolved. Turn off heat and let steep for 30 minutes.
