Torrejas Guatemaltecas | Stuffed French Toast | Fried Doughnuts | Quick & Easy Dessert Recipe
These torrejas that I will show you how to make are just so unbelievably delicious! They are a specialty in Guatemala and I bet you have never tried anything like these before. They are little buns that are stuffed with either a jam or custard filling, they are then dipped into a whipped egg batter then fried until golden brown like a doughnut. To top everything off it is then soaked in this aromatic syrup made of unrefined cane sugar, cinnamon and allspice! If you really want to try something new that will bring a new experience to your life, you must make these!
8 pieces of thick bread sliced or buns (brioche, challah or french)
Berry Filling:
1 cup Raspberry or mixed berry Jam
1/4 cup softened butter
1/4 cup raisins
custard filling:
Instant Vanilla pudding
Milk
4-6 eggs separated
oil for frying
Syrup:
3-4 Piloncillo or 2 cups sugar
1 cinnamon stick
2 cups water
5 cloves
5 whole allspice
Directions:
Start by making the syrup. Place the ingredients into a small pot and bring up to a simmer. Allow it to cook until all the syrup is a bit thickened and no longer watery.
Make your filling of choice, if using instant vanilla pudding, follow directions in the back of the box and allow to chill in the fridge so pudding will set.
Cut one side of the bread open and fill with the filling and set aside.
In a bowl, separate the eggs and whip the whites on a high speed until stiff peaks form. Quickly then add the egg yolks back into the stiff egg whites and mix only until combined. You want to be careful and delicate with the eggs so they will not deflate.
Get a saucepan ready and pour about a 1/2 inch of oil into the pan.
Once the oil is hot, Dip one bread into the egg batter and place it into the oil.
Flip it over once the first side is brown. Once brown on both sides place it on a paper towel cooling rack.
Place all of your torrejas into a large casserole pan and pour the syrup all over the torrejas. Allow the syrup to absorb and soak in the syrup. These are INCREDIBLE! Enjoy!
