This baked eggs in tomato dish is one my all time favorite. it’s an absolute classic and it is found mostly in restaurants near the french riviera. It’s a simple dish with tons of class and tasting it is worth a thousand word. Make sure you use home made tomato sauce and French bread slices sizzled in olive oil for best result.
Ingredients you need:
2 good quality eggs
2 tablespoon of olive oil
2 teaspoon of capers
a few slice of baguette style bread (french bread
some excellent quality cooked tomato sauce: ( tomato sauce flavoured with provencal herbs, ex thyme, bay leaf, oregano,onion garlic and red wine)
