In the former Katsunuma town area, which is the eastern edge of the Kofu basin, most of the area is fan-shaped and well-drained. The Koshu grape variety, which is indigenous to Japan, has been cultivated since the Edo period. After that, in Katsunuma, grape varieties produced for winemaking were introduced one after another, and many varieties are now produced [2]. In Katsunuma, more than 30 brewing companies produce about 25% of the national production of wine [3]. Today, there are many wineries not only in the former Katsunuma Town area but also in various parts of Yamanashi Prefecture. Koshu is regarded as a raw material for white wine, and Katsunuma’s 100% Koshu white wine “has a soft mouthfeel and a dry aftertaste [4]” and “has a different taste from French wine.”
