Coq Au Vin (translated Rooster / Cock In Wine) defines exactly what French countryside comfort food is all about. While the dish is hearty it is not overly rich and heavy and most certainly can be enjoyed anytime of the year.
1 large onion or 1 cup frozen pearl onion + 1/2 large onion
6 cloves garlic
3 carrots
6 oz pancetta or bacon
8 chicken thighs or 4 chicken legs
1.5 tbsp tomato paste
2 tbsp flour
1/4 cup brandy or cognac
2.5 cups red wine
4 tbsp olive oil – split in 2, 2tbsp portions
Bouqet Garni – 2 bay leaves, thyme, parsley stems
8 oz cremini mushrooms
1 tbsp picked thyme leaves
