VEGAN GALETTE BRETONNE French Savory Pancake Recipe

Ingredients

Galette Bretonne (Pancake Batter)
1 cup buckwheat flour
1 tbsp flax seed or chia seed meal + 3 tbsp water
1/2 cup almond milk (or milk alternative of your choice)
1/2 cup water
1/2 cup beer (or water)
1 tsp oil
1/4 tsp salt
coconut oil for oiling crêpe pan

Mushroom Filling
2 cups sliced mushrooms
1 clove garlic minced
1/4 onion finely sliced
salt and pepper to taste
oil for sauteing

Spinach Filling
3 cups packed spinach
1 clove garlic minced
salt and pepper to taste
oil for sauteing
