Ingredients:
1 wheel of Brie
8 oz. shredded mozzarella cheese
1 oz. cream cheese
1/2 cup chopped strawberries
1/2 cup of blueberries
1 teaspoon baking powder
2/3 cup almond flour
1/4 cup coconut flour
1 egg
2 tablespoons of ground flax (optional)

Microwave the mozzarella and cream cheese for 30 seconds on high power, mix to check consistency.  Microwave again for 20 seconds and mix; repeat until consistency is smooth.

Add the almond flour, coconut flour, baking powder, ground flax (optional) and the egg; mix well.  Place the dough between 2 pieces of parchment paper, flatten and shape the dough into a circular shape with a rolling pin or hands. 

Place the brie in the middle, then use a pizza cutter to cut slits from the center brie towards the edge of the dough.  Add the berries on top of the brie then wrap up the dough.

Bake at 400 degrees for 25 minutes.  Let it cool for 30 minutes before serving.
