🍇 Cab Sauv is a red grape variety, originating from the South West of France.

🍇 The grape is a cross between Cabernet Franc (red) and Sauvignon Blanc (white).

🍇 Cab Sauv was not widely planted in Bordeaux until the 1700s, Mouton was one of the early growers (now the famous Mouton-Rothschild producer). Before this time, Malbec as the dominant Bordeaux left bank grape variety.

🍇 Cab Sauv is a late ripening grape, with small thick skinned berries. It’s generally high in tannin and alcohol, moderate to high in acidity. It has a great affinity for oak ageing.

🍷 Cab Sauv wine has flavours of dark berries such as black cherry, blackcurrant and blackberry in young expressions, as well as herbaceous notes such as mint or even eucalyptus. Bordeaux Cab Sauv is particularly know for having floral notes of violet. Oak aged expressions can demonstrated aromas of vanilla, cedar, cinnamon and caramel. Extended ageing of Cab Sauv can result in aromas of leather, coffee and tobacco.
