The traditional French countryside dish Ratatouille is a perfect choice for summer, either as your main dish or a starter for your lunch or dinner. Thomas from Republique shows us how to cook this great dish!

This recipe feeds 2 persons.

Ingredients:

1/2 eggplant

1/2 green zucchini

1/2 yellow zucchini

1 red bell pepper

2 sticks green celery

5 cloves garlic

1 small can tomatoes

1 pinch thyme

2 dl red wine vinegar

Salt and pepper

Rucola

Spinach leaves

Process:

The sauce:

Roughly chop celery and garlic, give it and the thyme a short roast before adding red wine vinegar.

Boil down the vinegar a few minutes, then add your tomatoes.

Let it all simmer approximately 15 mins.

Remember to season with salt and pepper.

The veggies:

Cut out all greens in a preferred size.

Throw them all on the warm grill, give a good roast approximately 10-15 min.

Remove from the grill and toss it in the tomato sauce with the ruccola and spinach leaves.
