Chop ingredients
Celery
Carrot
Onion
Garlic

Meat – chuck beef cut
Pancetta – diced ham or bacon
Both will offer very different flavors.

Salt
Pepper
Bay leaf
Thyme

Tomato paste

Red wine (a good bottle) you’ll use 2-3 cups
Beef broth / beef boullion cube
2-3 cups

Never drown the meat. Keep sauce in a side jar if meat starts to drown.

Keep those extra drippings fir the following day when reheating leftovers.

Eating TIP: soak up all that delicious sauce with some Toasted French Bread with Olive Oil (toast in oven).

Drink the wine while you cook! There’s plenty to share a glass with a friend and make this dish.
