One of the most common and the highest regarded method of making sparkling wine is called the Traditional Method or the Champagne Method. (Or Methode Champenoise if you’re French or Methodo Classico if you’re Italian.)

It’s starts out using a process called double fermentation: after still (regular ol’ non-sparkling) wine is made, a second fermentation incurs from which come the bubbles! Watch to see how the wine is finished using the Traditional Method.
