Ingredients that you will be needing
210g of Almond flour
110g of powdered sugar
3 egg whites
30g of granulated sugar
1 teaspoon of red food coloring (Any color you would like)
Vanilla Extract (Totally optional)
Method:
Firstly you need to put the powdered sugar and Almond flour in a blender and blend until its well combined and has no big lump when being sifted
After that you would need to sift the whole mixture to avoid any grittiness and you need to sift two table spoons at a time and smoothing the lumps with a spoon any left out mixture can be extracted.
Leave that aside and get another bowl adding the egg whites and whisking them until it reaches soft peaks then you need to gradually add the granulated sugar and mixture it until firm peaks ( with a hand mixer) you can check this by turning the bowl over your head and if nothing falls over then your mixture is ready!!
After whisking until stiff peaks add the red food coloring and FOLD in the coloring to avoid ruining the mixture then you need to GRADUALLY add the almond flour and powder sugar mixture to the stiff egg whites and fold it in until mixed presumably add two table spoons of the powder mixture and after adding it all the mixture should be thick and airy.
Transfer the macaroon mixture in a icing bag with a round tip and ice the mixture on a tray lined with parchment paper. To help you can insert a template under the parchment paper to have even circles and then remove it when finished.
After piping the mixture bake the macaroons at 120 degrees /248 fahrenheit for 15-20 minutes. To check if they are baked touch the top part and if they are firm then you can remove them
Let them cool down after baking
Filling
Go and grab your heavy or double cream add at least 1 cup of it and whisk until it becomes bubbly then add one table spoon of sugar or you can add sugar according to your taste. Mix until stiff peaks form and pipe them on the macaroons sandwiching them with another, let them cool down more and decorate with your favourite topping.
