Ever wanted to make french fries without using a ton of oil? I’ve got a secret for you!

I tried simply shallow frying the potatoes without doing much to them, and quite frankly they weren’t very satisfying and they didn’t stay hot or crispy for very long… but when I tried it with a common Japanese ingredient as a simple batter, they were suddenly so much better!

Shallow fried chips ingredients:
3 medium potatoes
Potato starch 3 tbsp
Vegetable or canola oil 3 tbsp
Salt and pepper

French fry dipping sauce ingredients:
Mayonnaise 3 tbsp
Lemon juice 1 tsp
Mustard 1 tsp
Parsley as desired
Salt and pepper

How to make these potato starch covered french fries:
1. Wash your potatoes
2. Cut into french fry shapes (I did mine at about a 1cm thickness)
3. Soak your potatoes in water with 2 tbsp salt for 10 minutes
4. Pat dry your french fry sticks
5. Cover in potato starch (do this step *just* before you fry, otherwise they will stick together!)
6. Add oil to pan
7. When hot, add in french fries and leave undisturbed for 10-20 seconds
8. Flip. Then cook on high heat for 7-10 minutes, flipping occasionally
9. Remove from pan and season immediately
10. Make the sauce by simply chopping up the parsley and combining all the sauce ingredients (this can be made while you’re waiting for your potatoes to soak!)
11. Experiment with other flavours, such as paprika or chilli!
