Peppermint is a flavor that reminds us of the Holidays. It is so soothing smell and tastes brings us back to the Holiday spirit.
Today, I am making Peppermint French Macarons to bring you the Holiday cheer!
Ingredients:
3 egg whites
1/8 tsp cream of tartar
1/8 tsp salt
1/4 cup white sugar
1 cup almond flour
1 3/4 cup confectionery (powdered) sugar
Red food coloring
Fillings:
8 oz Cream cheese
1 cup confectionery (powdered) sugar
2 Tbsp milk
1 tsp Peppermint extract
1. Using fresh eggs, separate egg whites from egg yolks. Set aside for 1-3 hours at room temperature.
2. Using the lowest setting of the egg beater, beat egg whites. Slowly add cream of tartar, salt and sugar. Continue beating egg until you can form a stiff peak.
3. Siff Almond flour and powdered sugar.
4. Slowly add dry ingredients to the meringue (egg whites). Mix using folding motion. Add red coloring. Fold until you can do the number 8 test.
5. Transfer mixture to a piping plastic.
6. In a baking tray, place a parchment paper. Make a circle pattern of the macaron.
7. Tap the baking tray to remove air bubbles.
8. Set aside for 1 hour. Touch the top of the macaron. It should be dry and should bounce back.
9. Make the Peppermint filling.
10. Combine cream cheese, powdered sugar, milk and peppermint extract. Mix using an egg beater.
11. When macarons are finally cool, pipe filling into macaron.
