Clafoutis! Originating from central France, this luscious and custardy easy baked french dessert recipe looks so impressive on any dinner table, yet is incredibly easy to make!

Traditionally made with cherries (Clafoutis aux cerises), I decided to mix up the original by adding a variety of beautiful British berries; raspberries, blackberries and red currant berries!

Suffice to say, you can substitute most fruits to suit your taste. However this is a recipe you can make throughout the year, showcasing that season’s best fruit!

I love that this dessert comes together so quickly. It’s perfect for that last minute family gathering! All the ingredients are common enough that you’ll have most at hand! Served best warm or cold – or for breakfast! 🙂

INGREDIENTS

A little bit of softened butter
400g mixed blackberries, raspberries, and red currants
50g ground almond
2 tbsp plain flour (gluten free works too!!)
100g sugar (I used golden caster)
Zest of 1/2 lemon
1/2 tsp salt
2 eggs
2 egg yolks
250mL double cream
Icing sugar to decorate
