Christmas Stuffing Butternut Squash
Christmas Stuffing
• 300 Gr white bread or Brioche dices and dried
• 100 gr Diced onion
• 50 gr dice celery
• 50 gr grated carrots
• 1 apple grated
• 150 gr Butternut squash Grated (the internals of the squash)
• 2 garlic cloves chopped
• 15 gr rough chopped parsley
• 15 ml oil
• 50 gr butter
• 100 ml Apple juice
• 250 ml no chicken bouillon stock
• 1 teaspoon poultry seasoning
• ½ teaspoon cinnamon
• ¼ teaspoon dry thyme
• ¼ teaspoon sage
• ½ teaspoon salt
• ¼ teaspoon black pepper
Butternut Squash
• 1 whole butternut squash cut in half long way
• 30 ml olive oil
• Salt to taste
• Black pepper to taste
• Fresh ground Nutmeg to taste
Cranberry Sauce (this yields 400 gr)
• 340 gr frozen Cranberry
• 50 ml wine (your choice of what kind)
• 130 gr sugar
• 12-15 gr grated ginger
• 1 pc cinnamon stick
• 1 pinche of sumac
• Zest and juice of one orange
Mushroom Sauce Gravy Style (Yields 1L )
• 30 gr dried mushrooms
• 1 L hot water
• 70 gr carrot dice
• 100 gr onion dice
• 50 gr celery dice
• 2 clove garlic
• 50 gr flour
• 50 gr butter
• Thyme
• Sage
• Salt pepper
