Sweet Potato Casserole Recipe :
*we use less sugar (a little over 1/2 cup, packed)
Stuffing recipe:
I modify of Delish’s classic stuffing:
Plain croutons (215 g or 7.5 ounces)
2 eggs
6 tbsp melted butter
3-4 cups chicken stock (adjust depending on how you like it)
2 tbsp chopped rosemary
2.5 tbsp chopped sage
1/2 cup chopped parsley
1 or 2 tsp salt
Black pepper
1 large chopped onion
2 cloves pressed garlic

Turkey Brine Recipe (I omit the candied ginger):
Gordon Ramsay’s Turkey Recipe:
Compound butter:
I use: 1lb butter, handful chopped parsley, 3 cloves pressed garlic, 2 lemons zested, juice of one lemon, salt and pepper
For inside the turkey: salt and pepper inside first, add in 2 onions cut in half, 2 lemons cut in half
*Rather than cover the top of the turkey with the remaining butter, melt in microwave for 30 seconds, and take a doubled layer of cheese cloth that has been wet with water, and then soak in butter to absorb it. Lay cheese cloth over turkey. Bake in preheated oven at 450 degrees for 45 minutes and then drop down to 350 degrees. Baste turkey 2-3 times, and cook until the deepest part of the thigh registers to 160 degrees on a thermometer (it’ll continue cooking once it’s out)
Once done, if you can, rest the turkey as long as you cooked it – it reabsorbs the juices and becomes incredibly juicy, NOT dry whatsoever, and it’ll be the best turkey you’ve ever eaten!
My green bean casserole recipe:
You need:
• 1 – 1.5 pound green beans, tips removed
• 1/2 sweet yellow onion, chopped
• 8 oz. package mushrooms, cleaned and sliced
• 2-3 tbsp butter
• 2 small cloves garlic, pressed
• 1 container of condensed mushroom soup
• 1-2 containers French’s Fried onions (depending on preference)
• 1/2 cup grated cheddar cheese or Monterey jack *optional
• Salt and pepper
In a pot of boiling water add 1 pound of green beans with 1 tbsp of salt. Boil for 5 minutes, strain, and add to a bowl of ice cold water with lots of ice to shock them and stop the cooking process (this also keeps beans super green and vibrant).

Prep: Clean and slice 1 small package of mushrooms and dice half of a sweet yellow onion. Press 2 small cloves of garlic.
Preheat oven to 350 degrees. Melt butter in a pan over medium heat, add in onions and sauté for a few minutes until softened and translucent, season with salt. Add in mushrooms, cook 4-5 mins until almost done, and season with salt. Add in garlic and cook for another 30-60 seconds (just until fragrant).
Dump mixture into a bowl. Pour in one package of mushroom soup concentrate (I use Pacifico, I’m not a fan of Campbell’s mushroom soup). Add in optional grated cheese, half a container of French’s Fried Add in half a container of French Fried Onions and the green beans, season well with salt and pepper and stir until well incorporated. Pour into a casserole dish *don’t be lazy like I was in the video, it makes a huge mess haha*.
Transfer casserole dish to oven, bake for 25 minutes (30 minutes total). Remove dish from oven add remaining Fried onions (I add a full package of French’s fried onions to the top of the dish) and bake for 5-10 more minutes, until onions are golden.

I use a whole onion from the cooked turkey, chop it up, and sauté it, then then add turkey fat and flour, then added flour and cook for a few minutes to get rid of raw flour taste, add in juices and any needed broth or water, a splash of white wine, and some heavy whipping cream to give the gravy a smoother and richer texture. Season with salt. (I use a little caramel coloring to brown the gravy, soy sauce works too!)
Cranberry sauce:
*We replace orange juice with water
