Ingredients:
for the cake top:
egg whites – 10 pieces

lemon – 1 piece (peel+juice)

the composition is divided in 3 cake tops

for the cream:
yolks – 10 pieces
sugar – 300 g (10.6 oz)
orange – 1 piece (peel+juice)
flour – 4 tablespoons

– the composition is placed on the steam bath for 30 min, mixing continuously
– let to cool until it reaches a neutral temperature
– then add:
butter – 250 g (8.8 oz)
chopped walnuts – 100 g (3.5 oz)

for decoration:
cream – 200 g (7 oz)
roasted peanuts – 50 g (1.76 oz)
decorative chocolate – 10 g (0.35 oz)
